So I know that it has been a few weeks since I have posted anything last, but I’m still discovering how to juggle a full time job, 2 children, a husband, and all my baking, so that there is always something new for me to write about. This week though marks a momentous occasion in our house as my husband has his very last class ever for work. This means that he can take the big electrical exam and get promoted from apprentice to journeyman! Yay!
So to celebrate I thought I’d surprise him with this pie he really likes, as a way to show how proud of him that I am. He’s stuck through this program for 5 long years, and it’s finally paying off.
To make this pie, you will need:
1 8oz pkg cream cheese, softened
1 C creamy peanut butter
1 C confectioner’s sugar
6 oz frozen whipped frosting
1/2 c sugar
1 c butter, softened
1 tsp vanilla
1 1/2 c chocolate chips, melted
1 c chopped peanuts
1 9-inch baked pie crust
*blend together the cream cheese and peanut butter until smooth and creamy
*Gradually blend in the confectioner’s sugar. Then fold in the whipped topping and set in a cool place.
*In a separate bowl blend together the sugar and butter until smooth and creamy, the longer you blend the fewer butter lumps you will have.
* Add vanilla and melted chocolate chips and beat until smooth.
*Spread a thin layer of chocolate in the bottom of the pie crust and sprinkle with a few peanuts.
*Fill pie crust with peanut butter mixture.
*Spread remaining chocolate over the top.
*Sprinkle with remaining peanuts.
*Allow pie to chill for 3 hours, then just slice, serve, and enjoy.
This is a simple recipe and yet, it is always a big hit when made at my house. Hopefully you and your family will enjoy it as much as mine has.
